Pretzel-Crusted Chicken Bites with Spicy Mustard Dipping Sauce
These little bites are perfect for fall entertaining. The pretzel crust and spicy mustard are reminiscent of eating warm pretzels on a cool fall day from vendors at a ball game. Perfect for a playoff get together and just a breeze to make! Assemble them ahead then quickly fry them up when you are ready to serve. Kids dig 'em too! Featured on our new Fall-Winter Menu, your guests will love the crispy crust and the tender chicken for any occasion.
1/4 |
cup Dijon mustard-plus 1 tablespoon
1/4
cup mayonnaise |
2
tablespoon chopped chives |
1/2
teaspoon Tabasco sauce - or more to taste
1/2
cup flour |
1/2
teaspoon salt
1/4
teaspoon pepper
1/3 |
cup flour |
2
eggs
3 |
cups pretzels, not low sodium
1 1/2
pounds boneless, skinless chicken breasts, cut into bite sized pieces
1/2 |
cup oil for frying
In a small bowl, mix the remaining 1/4 cup mustard, mayonnaise, chives, tabasco and season with salt and pepper to taste. Refrigerate.
Put the four in a wide shallow bowl (pie pans work really well for this). Stir in the salt and pepper and mix well. In another wide shallow bowl, lightly beat eggs and 1 tbsp. of mustard. Process the pretzels in a food processor until a coarse flour forms, about 30 seconds. Transfer pretzel flour to a third wide, shallow bowl. Line up the flour, egg, and pretzels bowls in that order.
Dredge both sides of chicken pieces with flour, then egg, and then pretzel, coating well and shaking off excess. Transfer to a baking sheet.
Heat oil in a 12 inch skillet over medium-high heat. When oil is hot but not smoking, add coated chicken pieces to fill the pan but not touching each other. Cook until the first side is dark brown, about 2 minutes. Carefully flip and cook until the chicken is cooked through, about 2-4 minutes more.
Place cooked chicken on paper towels to drain then serve place on platter with mustard dipping sauce and serve!
